How unfortunate that the price of fresh mushrooms has skyrocketed in my part of Northern California. I cannot afford to spend $12-$15 for a bowl of soup, so this recipe will need to wait until these little gems come down to a more reasonable price point. Looks so good. Yum!

I made it tonight! It's DEL-ISH-US! Those fried oyster mushroom pieces are something else! Although warning: if you're cooking without a fan, frying the mushrooms quite dry with the cayenne pepper made my kitchen feel like the riot police had rocked up and pepper sprayed me for cooking too aggressively! 10/10 would do again
In Canada where I live, I can get a hold of several types of different fresh mushrooms – button, enoki, oyster, portabello, shiitake, crimini. I love cream of mushrooms soup and because of allergies have had to forgo the Campbells' variety. Now I'm going to make my own (w/coconut milk). Awesome video – keep them coming!

Great recipe! I make something similar t this, I always use a small squirt of dijon mustard with the mushrooms, and add some fine chopped leeks in with the button mushrooms that I'm cooking. I love the basil idea at the end, I may start doing that when it's in season here… otherwise I guess parsley can work as well since it's available all year round?
